An award-winning boutique bakery in Hamilton is hiring an experienced and artistic Pastry Chef to lead its pastry section. This is a hands-on role where the chef will be responsible for the daily preparation of pastries, croissants, entremets, plated desserts, and rustic breads made from scratch using local and organic ingredients.

🎯 Key Responsibilities
- Manage full pastry production line for the bakery including laminated doughs, tart shells, sponge cakes, fillings, and glazes
- Prepare daily stock of French pastries, viennoiserie, cookies, muffins, and other baked goods
- Assist with bread production (sourdough, focaccia, brioche, etc.) where required
- Decorate and present pastries with precision and artistic finesse
- Work alongside bakers to manage ovens, proofers, and fermentation processes
- Develop seasonal dessert menus and contribute to R&D for new product launches
- Maintain all hygiene, HACCP, and food safety standards in pastry section
- Manage pastry kitchen inventory and support ordering and cost control
- Train and guide junior pastry assistants or interns
- Work within production deadlines and quality targets
💡 Ideal Candidate Profile
- Minimum 3–4 years experience as Pastry Chef or CDP Pastry in hotels, fine dining, or specialty bakeries
- Proficient in French pastry techniques, piping, chocolate tempering, and dough lamination
- A creative eye for plating and dessert aesthetics
- Good knowledge of artisan baking principles and natural fermentation
- Strong leadership and multitasking ability
- Ability to follow recipes accurately while also developing custom creations
- Culinary or baking school certification preferred
- Commitment to high standards, cleanliness, and teamwork
