Creamy Truffle Tagliatelle (Tagliatelle al Tartufo Cremoso)

A luxurious Italian pasta dish made with silky tagliatelle, infused with aromatic truffle oil and enveloped in a rich, creamy sauce — elegant, simple, and irresistible.

🍝 Ingredients

  1. 400g fresh or dried tagliatelle

  2. Salted water for boiling

For the truffle cream sauce:

3. 200ml heavy cream

4. 2 tbsp unsalted butter

5. 2 garlic cloves, finely minced

6. 50g grated Parmesan cheese

7. 1–2 tbsp white or black truffle oil (to taste)

8. Salt and black pepper to taste

9. Optional: freshly shaved black truffle for garnish

10. Optional: chopped parsley or microgreens for garnish

👨‍🍳 Instructions

  1. Cook the tagliatelle:

Boil pasta in salted water until al dente. Drain and reserve a bit of pasta water.

  2. Prepare the sauce:

In a large pan, melt butter over medium heat. Add garlic and sauté for 1–2 minutes until fragrant (do not brown).

  3. Make it creamy:

Pour in the heavy cream and simmer gently for 3–4 minutes. Stir in Parmesan cheese until melted and smooth.

  4. Add truffle flavor:

Remove from heat and stir in truffle oil. Season with salt and black pepper.

  5. Combine pasta and sauce:

Toss cooked tagliatelle into the sauce, using a little reserved pasta water if needed to adjust the consistency.

  6. Serve:

Plate immediately and garnish with shaved truffle, parsley, or microgreens for a restaurant-style finish.

💡 Cooking Tip

Use high-quality truffle oil and don’t overheat it — add at the end for the best flavor.
