Dora Aloo Chaat Recipe by chef Dev Raj

Ingredients:

  • 4 medium-sized boiled potatoes (Aloo)
  • 1/2 cup boiled chickpeas (optional)
  • 1/2 cup tamarind chutney
  • 1/2 cup green chutney (coriander and mint)
  • 1/4 cup yogurt (plain, whisked)
  • 1/4 cup sev (crispy chickpea flour noodles)
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • Fresh coriander leaves (for garnishing)
  • 1/2 tsp roasted cumin powder
  • 1/2 tsp red chili powder
  • 1/2 tsp black salt
  • Salt to taste
  • 1/2 tsp chaat masala
  • Lemon wedges (optional)
  • Pomegranate seeds (for garnish, optional)

Instructions:

  1. Prepare the potatoes: Boil the potatoes until soft. Peel and cut them into small cubes.
  2. Assemble the chaat: In a large plate or serving bowl, add the boiled and cubed potatoes. If you want, you can add boiled chickpeas for extra protein.
  3. Add chutneys: Drizzle the tamarind chutney and green chutney over the potatoes. Be generous to ensure a tangy flavor.
  4. Yogurt topping: Pour the whisked yogurt over the potatoes and chutneys. The yogurt helps balance out the tanginess and gives a creamy texture.
  5. Spices: Sprinkle roasted cumin powder, red chili powder, black salt, and chaat masala on top for flavor.
  6. Add veggies: Scatter finely chopped onions, tomatoes, and coriander leaves for freshness and crunch.
  7. Garnishing: Top the chaat with sev for crunch, pomegranate seeds for sweetness, and a little extra coriander leaves for color.
  8. Optional lemon: Squeeze a bit of lemon juice on top for an extra tangy kick.
