A luxurious coastal resort in Queensland is hiring a dynamic and visionary Executive Chef to take full leadership of its multi-outlet culinary operations. The resort is known for fresh seafood, modern grill menus, and premium guest experiences set against a stunning tropical backdrop.

🎯 Key Responsibilities
🏨 Kitchen & Staff Management
- Oversee operations of all F&B outlets (buffet, fine dining, poolside grill, in-room dining).
- Lead a brigade of 20+ chefs, cooks, stewards, and kitchen assistants.
- Recruit, train, and evaluate kitchen team members.
🍽️ Menu Planning & Food Innovation
- Create and rotate seasonal menus focusing on seafood, local produce, and modern Australian grilling.
- Innovate new dishes tailored to international tourists and luxury clientele.
- Maintain food quality, creativity, and presentation across all meals.
💵 Financial Management
- Work with General Manager & F&B Director to meet food cost targets.
- Track daily P&L reports, manage vendor relationships, and control inventory.
- Implement systems to reduce wastage and improve profitability.
✅ Food Safety & Compliance
- Ensure all kitchen operations comply with Australian HACCP standards.
- Conduct regular hygiene audits and training sessions for staff.
- Maintain proper allergen documentation and dietary accommodations.
🧑💼 Guest Interaction & Event Coordination
- Interact with VIP guests and customize culinary experiences when required.
- Design gourmet menus for events, weddings, conferences, and private functions.
- Collaborate with banquet and operations teams for flawless event execution.
✅ Job Requirements
🎓 Education
- Degree or Diploma in Hotel Management / Culinary Arts from a recognized institute (India or overseas).
👨🍳 Experience
- Minimum 8–12 years of experience, with at least 3–5 years as Executive Chef or Senior Sous Chef in a 4 or 5-star resort, luxury hotel, or premium standalone outlet.
- Extensive experience in seafood handling, grilling, à la carte service, and buffet operations.
- Prior international exposure or cruise/resort experience preferred.
