Overnight Belgian Waffles
Delicious, fluffy waffles that you can prepare the night before and cook fresh in the morning.
Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 3/4 cups milk
- 1/2 cup unsalted butter (melted)
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon lemon zest (optional, for added brightness)
- 1/2 teaspoon ground cinnamon (optional)
- Non-stick spray (for greasing the waffle iron)
Instructions:
- Prepare the Batter:
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
- In a separate bowl, whisk together the milk, melted butter, eggs, vanilla extract, and lemon zest (if using).
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix; it’s okay if there are a few lumps.
- Refrigerate Overnight:
- Cover the bowl with plastic wrap or a lid and refrigerate the batter overnight. This will allow the flour to hydrate and the flavors to meld, giving you a fluffier waffle.
- Cook the Waffles:
- The next morning, preheat your Belgian waffle iron according to the manufacturer’s instructions.
- Lightly spray the waffle iron with non-stick spray.
- Pour the batter into the waffle iron, using a ladle or measuring cup. Be sure to not overfill.
- Close the waffle iron and cook until the waffles are golden brown and crispy, typically 3-5 minutes depending on your waffle iron.
- Serve:
- Serve the waffles immediately with your favorite toppings like syrup, fresh berries, whipped cream, or butter.
Tips:
- If you don’t have time to refrigerate overnight, you can let the batter rest for at least 30 minutes to allow the flour to fully hydrate.
- For an even fluffier texture, you can separate the eggs, whip the egg whites to stiff peaks, and fold them into the batter before cooking.
Enjoy your Overnight Belgian Waffles! Perfect for a cozy breakfast with minimal morning effort.
