Job Description

A leading European contemporary fine-dining restaurant in central Melbourne is seeking a skilled Sous Chef with strong experience in premium kitchens. The successful candidate will support the Head Chef in maintaining a high standard of cuisine, managing daily kitchen operations, and mentoring junior staff.

Key Responsibilities

Kitchen Leadership & Service Execution

  • Assist the Head Chef in leading all aspects of kitchen operations during service.
  • Maintain a calm, professional kitchen atmosphere in high-pressure situations.
  • Supervise line cooks and kitchen assistants, ensuring service runs smoothly and to standard.

Food Preparation & Quality Control

  • Monitor mise en place and ensure all dishes meet plating and quality standards.
  • Ensure consistency in taste, temperature, and presentation for each dish.
  • Take charge of sections when needed, especially in the absence of the Head Chef.

Team Training & Staff Management

  • Train and mentor junior chefs, guiding them on technique, hygiene, and time management.
  • Provide constructive feedback and ensure SOPs are followed.
  • Support rostering, staff planning, and team meetings.

Food Safety & Hygiene

  • Enforce strict hygiene, cleanliness, and food safety regulations (HACCP-compliant).
  • Monitor proper food storage, labeling, and temperature control.
  • Lead by example in maintaining sanitation protocols and avoiding cross-contamination.

Cost and Inventory Control

  • Assist in stock management, food ordering, and inventory systems.
  • Monitor and minimize kitchen wastage.
  • Collaborate with the Head Chef to maintain food cost targets and supplier coordination.

Job Requirements

Education

  • Degree or Diploma in Culinary Arts or Hotel Management from a reputed institution (India or overseas).

Experience

  • Minimum 4–6 years of experience, with at least 2 years in a Sous Chef role in fine dining or 5-star hotel kitchens.
  • Strong knowledge of European contemporary cuisine, French techniques, and seasonal Australian produce.
  • Proven ability to work in fast-paced, detail-oriented kitchens.

For Indian Candidates (International Applicants)

  • Must have strong English communication skills (IELTS score preferred).
  • Previous international experience is advantageous but not mandatory.
  • Willingness to adapt to the Australian hospitality work culture and standards.
