1. Creamy Tomato Seafood Bisque

Ingredients:

seafood prawns, fish, crab,Lobster

  • 4 cups fresh tomatoes, chopped
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream or coconut milk
  • 1 tbsp olive oil
  • 1 tsp sugar (optional)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the chopped onions and garlic, and sauté until soft and fragrant (about 5 minutes).
  2. Add the chopped tomatoes and vegetable broth. Bring to a simmer and cook for 20-25 minutes until the tomatoes break down.
  3. Use an immersion blender or transfer the mixture to a blender and purée until smooth.
  4. Return to heat and add heavy cream (or coconut milk) and sugar if using. Simmer for another 5 minutes.
  5. Season with salt and pepper. Garnish with fresh basil leaves.
